Did you know that AI can be used to produce the finest Champagne? An absolutely popping project supported by Eurielle Trombert, Data & AI Director at Moët Hennessy, and Axel de Goursac, Group Head of Data Science at LVMH has made it so.
In a marriage of tradition and innovation, Moët & Chandon developed a solution to ensure consistent grape quality in champagne production. Optical sorting technology reinforced with computer vision algorithms offers accurate detection and isolation of grapes affected by diseases like Botrytis. The results are exceptional, with high-quality grapes and impressive grades reported by oenologists. This project exemplifies how technology and human expertise can come together harmoniously to elevate the production process.
"Mastering and customizing Generative AI models for adapted use by the Maisons is our next big stake."
With their sights set on using AI for operational excellence, Eurielle and Axel continue to push the boundaries of innovation, while preserving heritage.
